A spicy version of egg fried rice, which can be a meal in itself, or accompany other dishes.
Cook the rice, prefereably a day in advance so its had a chance to dry in the fridge over night.
Heat your wok on a medium heat, add the groundnut oil, then garlic and chilli and fry for a minute or so, without burning the garlic.
Turn up the heat to high, and add the cooked rice and fry for a couple of minutes stirring continually.
Move all the rice to the edge wok, and add both of the eggs - and fry/scamble them seperately from the rice (you can remove the rice if that helps).
Once the egg is cooked, add the peas, mix in with the rice and egg and stir in together under heat for a couple of minutes, then add the a good dash of dark and light soy sauce (1-2 tblspoons each as required).
Take the wok off the heat, and mix in a good tablespoon of sesame oil.
Serve and enjoy :-)
You probably won't need much/any salt as the soy is quite salty.
