A quick and easy to cook warm bowl of green lentils with fried/griddled courgette and fried eggs.
To start prepare the green lentils by boiling till a la dente with the bay leaf and half stock cube.
Whilst the lentils are cooking slice the courgette into strips and then griddle or fry in the olive oil with the shallot and garlic till slightly coloured and soft. Add the cooked courgette, shallots and garlic to a warm bowl.
Once the lentils are cooked, drain and remove the bay leaf, then add to the bowl and mix with the courgette.
Fry the eggs gently in olive oil till they’re cooked as you prefer (soft yolks are my preference), then add to the bowl.
Serve and enjoy :-)
You can miss out the eggs for a vegan meal.
