A vegetable curry made with whatever left over vegetables you might have.

Ingredients

  • 250g tender stem broccoli
  • 1 large chopped red onion
  • 6-8 cloves chopped garlic
  • 1 inch square cube Ginger
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 1 teaspoon mild curry powder
  • 1 tablespoon fenugreek
  • 2 teaspoons tumeric
  • 1/2 small cauliflower
  • 1 sweet potato

Recipe Method

Steam the vegetables for around 10 minutes until just cooked (should still have some bite).

Reserve the water from the vegetables and set them aside.

Fry off the red onion for 10 mins, then add the garlic, chilli and ginger. Fry gently for a further 2 minutes, then add the spices.
