Fried lamb's liver with smoked back bacon and a savoury rice with chopped bacon.
Cook the rice as per the packet instructions (or use the obsorbtion technique I've detailed in my rice cooking recipe).
Chop the red onion into thin slices, then add to a hot frying pan with the olive oil. Fry off the onions until they're caramlised and golden brown. Once the onions are caramlised, set them aside on a warm plate.
Chop 2 of the rachers of bacon into pieces, and fry these off until crispy, then add these to the cooked rice and combine. Add the remaining whole rashers of the bacon to the pan and fry these until cooked, then set aside with the onions.
Add the liver to the frying pan, on a medium heat. When the liver is nearing done (I like it medium: just a bit pink in the middle), add the butter and garlic and fry for another minute or so.
Season well with salt and pepper, and serve :-)
