A Chinese style dish of char grilled marinated pork chop, with stir-fried vegetables.
First, create the marinade for the chops. Combine 1/2 tblspn of sesame oil, 3 tblspns of rice wine, 2 tblspn of dark soy and 3 tblspns of light soy with 1 tblspn of light honey. Marinade the pork chops for as long as possible - but at least 30 mins minimum.
Once the chop has been marinated, heat a griddle pan to a very high heat (will take at least 5-10 mins). Slice some cuts into the fat on the chops - this will stop them from curling under the heat. Coat the chops in a little peanut oil, then lay on the griddle. Cook the chops till just cooked through, around 5 mins each side depending on thickness. Rest the chop for at least half the cooking time in cooking foil, around 5 minuntes.
For the stir-fried vegetables, heat a wok on a high heat. Add some groundnut oil (1 tblspn), the garlic, ginger & chilli to fry for a couple of minutes. Add the larger, tougher vegetables to the wok (cabbage, broccoli, mushrooms, onion), stirring continually to avoid burning, followed a minute or so later by the smaller vegetables (carrot, beansprouts). Once the vegetables have been fried for around 3-5 minutes till soft (but still retaining some crunch), turn the gas down, and add the med dry sherry/rice wine. Add the oyster sauce (2-3 tblspoons), light and dark soy sauce (1-2 tblspoons each as required), stir in. Add the cornflour (mixed in a small cup with a couple of tablespoons of water). Cook off the sauce for about a minute till it thickens, then add the sesame oil (half tblspoons) and mix in.
Serve each chop with the vegetables, enjoy :-)
