Chop the garlic and chill into thin slices. Heat a medium sized frying pan till hot, then add the olive oil, garlic and chilli and fry for 2-3 minutes on a low heat. Add the chopped tomatoes, then using a hand blender carefully blend these on a low speed, leaving a few chunks of tomato for texture. Season with salt and a good grind or two of pepper, then simmer for around 15 minutes. Just before serving, add the sliced black olives to warm through for a minute or two.
Cook the penne for the recommended time in a pan of simmering salt water. Once cooked, drain thoroughly, then add to the frying pan with the sauce, and mix.
Serve with a good handful of freshly grated parmesan and a drizzle of extra virgin olive oil, and enjoy :-)
