Melt butter in a pan. Add flour, then gradually add the milk while boiling. Add grated rind of one of the oranges, then the orange juice from both. Boil thoroughly for 1 minute, then remove from the heat, and cool slightly.
Add sugar to the pan and then beat in the egg yolks (ensuring the pan is cool enough not to scramble them).
Whisk the egg whites to very stiff peaks, then fold gently into the mixture.
Pour the mixture into individual ramekins.
Place in the oven at 200 C or 400 F, and cook till well risen, roughly 12 mins.
Serve immdeiately.
