Sarah's Simple Spaghetti Bolognese

A simple, but delicious spaghetti bolognese.

Ingredients

  • 1 kg beef mince
  • 900g - 1kg spaghetti
  • 2 x 400g chopped tomatoes
  • 2 medium onions
  • 7-9 cloves garlic
  • 1 tblspsn dried oregano
  • 1/4 pint water
  • 2 bay leaves
  • 1 tblspn tomato paste
  • 4 tblspns extra virgin olive oil
  • as required salt
  • several grinds pepper
  • as desired cheese (fresh parmesan/cheddar, etc)

Recipe Method

Chop the onion and garlic, then add the onion to the pressure cooker and fry until soft. Next add the chopped garlic, and fry for a couple of minutes on a low heat. Turn up the hear, and add the minced beef, frying until its brown - this will add extra flavour. Once the mince is brown, add the chopped tomatoes, water, tomato past and mix in. Next add the oregano and bay leaves, then season with salt and pepper.

Put the lid on the pressure cooker and bring it up to full pressure, then cook for around 30 minutes. just before the mince is done, put the spaghetti in a pan of simmering salted water and cook as per instructions.

When the spaghetti is cooked, drain and coat in a light splash of extra virgin olive oil. When the mince is finished, check the seasoning and adjust if required, remove the bay leaves and serve with the spaghetti. Grate on some of your favourite cheese to finish.
