This is a really quick, easy, healthy (I think!) spaghetti carbonara dish. Unlike most recipes, it doesn't use cream, just the eggs for the sauce.
Chop up the smoked bacon in small pieces, removing the fat if you're feeling healthy. Heat a medium sized frying pan till hot, and fry off the bacon till crispy. Add the garlic and turn down the heat, and fry for a further couple of minutes.
Cook the spaghetti for the recommended time in a pan of simmering salt water. Once cooked, drain thoroughly, then add to the frying pan containing the bacon and garlic, combining well.
On a low heat, break the eggs into the frying pan, mixing as you go. Season heavily with pepper. Keep stirring on a low heat until the egg is just beginning to solidify and cook. You want to have the egg quite moist (sorry, slightly overcooked the dish in my pic!), to give an rich sauce. Serve immediately.
Watch the salt, as the bacon will be very salty already.
