This is a really simple cold salad with mackerel, new potatoes and tomatoes.
Scrub the new potatoes, then add to a boiling pan of salted water and cook for 12-14 minutes until just soft. Once cooked, drain thoroughly.
Slice the onion (or shallots) into very thin slices. Make a basic vinaigrette with the olive oil and wine vinegar. Combine the onion and the vinaigrette, then add these to the potatoes (preferably whilst still warm - they'll then absorb the vinaigrette easier).
Wash and slice the tomatoes. Serve with the mackerel and potato salad :-)
You can use a good quality tinned mackerel for this recipe.
