A spicy smoked bacon and courgette penne pasta with black olives.
Chop up the smoked bacon in small pieces, removing the fat if you're feeling healthy. Heat a medium sized frying pan till hot, and fry off the bacon till almost fried crispy. Slice the courgette into thick slices, then add and fry until soft, with a bit of colour if possible.
Slice the garlic and chilli into thin slices, then add these to the frying pan, turn down the heat, and fry for a further couple of minutes. Season heavily with pepper. Finally, add the chopped tomatoes and simmer for at least 20 minutes. Check the seasoning and add salt if required.
Cook the penne for the recommended time in a pan of simmering salt water. Once cooked, drain thoroughly, then add to the frying pan containing the bacon, courgette and garlic, combining well.
Serve immediately.
