A tasty snack or starter for people who like tinned sardines or mackeral. Very healthy!
Under the grill toast the bread on one side. Turn it over and spread a thin layer of sardines or mackeral onto each slice and replace under the grill to heat gently while you slice the tomatoes. Put the tomato slices on top of the sardines or mackeral and grill until well heated and softening. Meanwhile slice some chedder cheese. Cover the tomatoes with cheese and grill until melted and just bubbling. Serve immediately for light lunch. OR Cut each slice into two to serve as a starter for 4 people with a little rocket on the side.
