A side dish / starter of roasted sweet potatoes. These go great with an aioli (garlic mayo) dip. With a crispy outside and soft middle, they're incredibly morish...
1. Wash and peel the sweet potato(es), then cut into even sized wedges.
2. Par boil the wedges in a pan of salted water for around 2-3 mins until soft.
3. Put the wedges in a bowl, and mix with the olive oil, then season generously. with salt and pepper.
4. Place the wedges onto a baking tray evenly spaced, and bake for around 30-45 mins till golden (you want some caramalisation :-) ). Check the wedges every 10-15 mins and turn them.
5. Serve, preferably with a aoili dip !
