A spicy couscous recipe, with a tomato dressing and chopped tomatoes.
Cook the couscous as per the packet instructions, or place in a bowl, fill till just over the top of the couscous with boiling water, then cover and leave for 5 minutes. Once ready, uncover and stir.
For the dressing - add the olive oil, mustard, vinegar to a small bowl and mix well. Add in the tomato paste, water, chilli flakes, oregano and mix well.
Chop the tomatoes in large chunks, add to the coucous, then add the dressing. Check the seasoning, then serve.
