A basic, but delicious potato salad, with red onions, mayo and Dijon mustard.
1. Scrub the new potatoes, then put them in a pan of salted water and bring to a simmer for 10-15 till they're soft, then drain and allow to cool slightly till warm.
2. Slice the red onions into fine slices, then add these to a bowl with the warm potatoes, then add a good 2-3tblspn of mayonaise, and 1-2 teaspoons of Dijon mustard to taste. Add a good grind of pepper and salt to taste. Mix together and serve :-)
You can use light mayo for a healthy alternative...
