An easy recipe for chicken breasts coasted in green pesto and wrapped in Parma ham. Delicious served hot with roasted vegetables mixed in bulgar wheat, or served cold with salad.
Heat the oven to 180c gas mark 6. Put a little olive oil in a roasting tin.
Coat the chicken breasts with green pesto. Carefully wrap each one with parma ham and place on the roasting tin. Roast without turning for about half an hour adding the cherry tomatoes after 15 minutes. For serving hot a little red wine may be added to the tin for the last 5 minutes. Remove the chicken and tomatoes from the tin and place on hot plates for standing time.Pour the wine into a small pan and thicken slightly with a little cornflour and water bring to boil for one minute. Pour sauce beside the chicken on the tomatoes.
Serve hot with bulgar wheat and roasted vegetables or cold with salas.
