A salad of hot smoked mackerel, beetroot, soft boiled eggs, lettice and new potatoes with a horseradish dressing.
1. Scrub the new potatoes, then put them in a pan of salted water and bring to a simmer for 10-15 till they're soft, then drain and allow to cool till warm.
2. Boil the eggs for around 7-9 minutes, you want them soft, but not runny. Once done, cool, then peel.
3. Make a French dressing - 3 tblspns extra virgin olive oil, 1 tblspn wine vinegar, 1 teaspoon Dijon mustard, then add 2 tblspn of horseradish sauce to taste.
4. Add the dressing to a bowl with the warm potatoes (helps them absorb more flavour if they're still warm), followed by the mackarel, slightly broken up, the beetroot (sliced) and the eggs.
4. Check the seasoning and serve :-)
