Sticky ginger pear pudding

Sweet sticky pears covered with a light ginger sponge. Delicious hot and good reheated in the microwave.

Ingredients

  • 2 large or 3 small Pears
  • 2 tablespoons Golden syrup
  • Optional Lemon Juice
  • 2 oz Butter
  • 2 oz Caster sugar
  • 1 large Egg
  • 4 oz S R Flour
  • 1 Teaspoonful Ground ginger
  • 1/2 Teaspoonful Mixed spice
  • To mix Milk

Recipe Method

Peel and core the pears. Slice them to cover the bottom of a buttered pyrex dish. Squeeze a little lemon juice over them if you have any. Spoon the golden syrup over the pears as evenly as possible.
Heat the oven to 180c or Gas mark 5. Beat together the butter and the sugar until light and creamy. Add the egg and continuing beating untl well mixed. Add the ginger and mixed spice to the flour and seive it into the mixture. Gently fold it in adding enough milk to make a soft dropping consistancy. Spread it over the pears . Cook for about 35 minutes until brown and well risen.

    This was lovely, I enjoy my desserts and I'll be making this again. I might cook it for slightly less time though next time I make it.
