A simple quick salad of tomatoes with lettuce with a French dressing.
Slice the tomatoes and add to a large salad bowl. Add the lettuce (I use Iceberg or mixed leaves). Season lightly with pepper.
For the dressing - I use 3 parts oil to 1 of wine vinegar - add 3 tblspns extra virgin oil, 1 tblspn red wine vinegar, 2 teaspoons Dijon mustard and a pinch of salt to a small bowl and mix thoroughly.
Serve the salad with the dressing seperate and dress at the last minute (to keep the leaves crunchy).
