A simple recipe of tomatoes, with a carrot coleslaw, radishes and a French dressing.
Slice the tomatoes and add to a bowl, along with the radishes.
To make the coleslaw, use a potato peeler to shred the carrots into fine slices, then add to the bowl.
For the dressing - I use 3 parts oil to 1 of wine vinegar - add 3 tblspns extra virgin oil, 1 tblspn red wine vinegar, 1 teaspoon of Dijon mustard and a pinch of salt and mix thoroughly.
Dress the salad with the dressing and serve.
