A healthy, quick and easy recipe for salmon en papillote with chillies and garlic.

Ingredients

  • 2 fillets salmon
  • 2 (de-seeded) chillies (birds eye if possible)
  • 3 cloves garlic
  • 1 glass (175ml) white wine
  • 1 lemon
  • to taste salt & pepper

Recipe Method

Wash the salmon, then place on a large sheet of kitchen foil. Fold up the sides of the foil, to form a parcel around the salmon. Add the white wine (a good Sauvignon work well with this!), then pour another glass for yourself ;-)

Chop the chillies and garlic into fine slices, then add to the parcel. Chop a slice from the lemon (about 1/4 in thick) and add to the parcel. Season with a good grind of course pepper, and plenty of salt.

Seal up the parcel (try and leave a small amount of space at the top to allow the fish to steam) and place in a pre-heated oven at 170 degrees C (fan assisted), 190 degrees C non fan, for around 10-15 minutes. Check after 10 minutes then every 3-4 minutes after that to ensure the salmon is perfectly cooked (just falling apart). Serve with a good squeeze of lemon juice, and enjoy :-)
