A healthy, quick and easy coleslaw recipe of cabbage, carrot and onions dressed with a tasty French dressing. A mandolin is really useful for preparing this quickly. This makes a perfect accompaniment for burgers, salads, seafood, etc.
Wash and remove the outer leaves from the cabbage, then shred the it, using a grater or mandolin, and add to a large bowl. Wash and peel the carrots, then grate these into the large bowl. Peel the onion, then finally slice or julien (using a mandolin is easiest) it and add to the bowl.
Mix the olive oil, vinegar and dijon mustard into a dressing, then add to the bowl. Season with salt and pepper and mix well. Enjoy :-)
You can experiment and add yogurt, chilli, horseradish or mayonnaise if you prefer.
