Spicy stir fried mushroom chow mein - a very simple quick and easy noodle stir fry with mushrooms and chilli peppers. This makes a great snack when you get in from a night out, etc.
Cook the egg noodles as per the packet instructions (usually 3 mins), then refresh them in cold water (this stops them becoming sticky and horrible!), then drain and set aside.
Add the garlic and ginger to a medium hot wok with the oil, and fry for a minute or so. Next, turn up the heat and add the chilli and mushrooms and fry for another 2 minutes.
Add the cooked noodles into the wok and fry for another minute, then add the rice wine/sherry, mix in well for 30 seconds. Turn down the heat to low, and add the soy sauce, then sesame oil. Mix in well, then serve and enjoy :-)
If you can't get shiitake mushrooms, just use any you have - button, portobello, etc.
