A recipe for grilled lamb chops, with a lemon, garlic and oregano dressing. Serve with couscous and a mixed leaf salad.
Cook the couscous as per the packet instructions (or simply place in a bowl, then cover with boiling water till completely submerged, then cover and allow to sit for 5 minutes, then stir).
For the dressing, finely slice the garlic and shallots, and place in a bowl, along with the olive oil, the juice of the lemon, and the red wine vinegar. Mix well and then leave to marinade for at least 15 minutes.
Season the chops well with salt and pepper, then grill them under a very hot grill for around 4-7 minutes each side depending on thickness and cooking preference (approx 4-5 mins each side for medium rare). Once cooked, place in tin foil and rest for 5 minutes.
Serve the chops with the couscous, and the mixed leaf salad. Drizzle half of the dressing on the chops, and the other half on the salad and couscous.
