Spicy Chinese Trout with Garlic Ginger and Chilli

A healthy yet delicious recipe for trout done fusion style with a Chinese style spicy sauce with garlic, ginger and chilli. Served on a bed of noodles.

Ingredients

  • 2 servings trout
  • 4 roughly sliced (5mm slices) sping onions
  • 5 cloves finely sliced garlic
  • 1 inch cube ginger, crushed or finely chopped
  • 1 tblspn dark soy sauce
  • 3 tblspns light soy sauce
  • 40ml rice wine (or dry sherry)
  • 1 de-seeded and finely sliced chilli (birds eye)
  • 1 1/2 tblspns sesame oil
  • 2 servings fine egg noodles
  • 3 tblspns groundnut or vegetable oil

Recipe Method

Cook the noodles as per the packet instructions (usually 3 minutes in boiling water), then refresh in cold water. Drain the noodles and set aside.

Heat a frying pan on a medium hot heat, add 2 tlbns of the groundnut oil, then add the place the trout skin side down and fry for around 4-6 minutes depending on thickness (you can see the flesh cooking up the fish). Turn the trout and cook for another 1-2 minutes until the fish is just cooked, then drain off the oil on kitchen paper.

In a seperate pan, on a medium heat, add 1 tblspn of groundnut oil, then the garlic and ginger, and fry for 2-3 minutes. Next add the chilli and spring onion and fry for another minute. Add the rice wine/sherry and turn the heat up for a minute, stirring well. Turn off the heat, and add the soy sauces and sesame oil.

Serve the trout on the noodles, and pour the sauce over both, enjoy :-)

    Yum ! Just needed some sort of vegetable, I added some baby corn.
