Pan Fried Salmon with a Burnt Butter and Caper Sauce

A recipe of pan fried salmon, with a burnt butter and caper sauce. Best served with creamy garlic mash !

Ingredients

  • 2 servings salmon
  • 50g butter
  • 3 cloves finely sliced garlic
  • 1 tblspn capers
  • to taste salt & pepper
  • 2 tblspns light olive oil

Recipe Method

For the sauce:

Put the butter in a sauce pan on a medium heat, and fry until the butter begins to brown and caramelise. Add the garlic and turn the heat down slightly, and fry the garlic till soft, then take off the heat and add the capers.

For the Salmon:

Season the salmon with salt and pepper. Heat a frying pan on a medium hot heat, then add the olive oil, then carefully add the salmon skin side down. Fry the salmon for around 3-5 minutes until you see it's cooked just over half way (you can see this from the side). Turn the salmon over and fry for a minute on the other side, or until the fish is just cooked and translucent.

Serve the fish with the sauce poured over it, and enjoy :-)
