This is a basic recipe for an omelette, you can add extra ingredients such as cheese, chives, prawns, etc as required.
Break the eggs into a bowl, add a good pinch of salt and pepper, and the milk, then beat the eggs gently till mixed.
Heat a small/medium frying pan to a high heat, add then add the egg mixture, stirring into the middle of the pan as its firms up, till they have firmed up on the bottom of the pan. Flip the omlette over in half, add the butter, then flip over again, and serve (cook for longer if you don't like it too runny).
