A quick and easy spicy chorizo and bean stew using butter and cannellini beans. Serve with savoury brown rice, or crusty bread :-)
Fry off the chorizo and onions for around 5 minutes on a medium till the chorizo is beginning to brown. Add the garlic and dried chilli, turn down the heat and fry for another 2 minutes.
Add the smoked paprika, tomatoes and both beans. Simmer on a low heat for around 15 minutes. Add the sherry vinegar, season with salt and pepper to taste and simmer for another couple of minutes, then serve and enjoy :-)
