Pan Fried Salmon with a Tarragon White Wine Cream Sauce

A delicious recipe for salmon with a tarragon white wine cream sauce. Serve with a warm potato salad or crushed new potatoes.

Ingredients

  • 2 fillets salmon
  • 4 finely chopped shallots
  • 2 cloves finely chopped garlic
  • 50ml double cream
  • 35ml white wine
  • 1 teaspoon tarragon
  • 2 tblspns unsalted butter
  • 3 tblspn light olive oil
  • 60ml water or light seafood/chicken stock

Recipe Method

Fry off the chopped shallots in the butter and 1 tblspn of light olive oil till soft, then add the garlic and fry for another couple of minutes. Add the white wine and simmer till all the alcohol has burnt off (it will lose its harsh smell). Add the cream, tarragon, stock/water, seasoning and simmer for 10 minutes.

Season the salmon with coarse ground pepper and salt.

Heat a frying pan on a medium high heat, add the rest of the light olive oil, then carefully add the salmon fillets skin side down. Fry the salmon for around 5-8 minutes (thickness depending) until you see the salmon has cooked around 3/4 way up, then flip both fillets over and fry for another couple of minutes.

Serve the salmon with the sauce, and some crushed new potatoes or a warm potato salad (pictured).
