A French style potato salad, with new potatoes and a French mustard dressing. This goes really well with pork and fish dishes, especially in the summer !
Wash and scrub the new potatoes, then add them to a pan of salted water, and bring them to the boil, then simmer for 10-15 minutes until just soft.
Mix the mustard, garlic, olive and white wine vinegar together to make a French dressing.
Once the potatoes are ready, drain them and leave them for a minute, then add the dressing and stir well whilst they're still warm. This allows the potatoes to soak in the dressing. Add salt and course ground pepper to taste. Enjoy :-)
I use Baby New Potatoes for this if I can get them, but Jersey New are great too.
