Pan Fried Salmon with Tarragon Butter

This is a very simple, but delicious pan fried salmon dish with tarragon butter. I love to serve it with a French style potato salad, and seasonal veg.

Ingredients

  • 2 fillets salmon (preferably with skin)
  • 2 large knobs butter
  • 1 teaspoon dried tarragon
  • good pinch course ground pepper
  • to taste salt
  • 2 tblspns vegetable oil or peanut oil

Recipe Method

Season the salmon with the salt and pepper on both sides, then place skin side down in a heated frying pan on a medium high heat. Fry until you can see the fish has been cooked just above half way (you can see the colour of the fish change as the fish cooks through), then flip over and cook for another 2-3 minutes until the fish is just cooked through.

Mix the tarragon and butter in a small dish, then top the cooked with with the butter.

Serve with potato salad and vegetables :-)
