Vanilla Rice Pudding

A relatively light, healthy(ish!), quick and easy rice pudding flavoured with vanilla.

Ingredients

  • 1 cup pudding rice
  • 6 cups semi skimmed milk
  • 2 cups water
  • 4 teaspoons unrefined cane sugar
  • 4 teaspoons vanilla extract
  • half teaspoon salt
  • large knob butter
  • to taste grated chocolate (optional)

Recipe Method

1. Add the pudding rice to a pan, with the water and milk.

2. Add the salt and vanilla extract.

3. Bring to the boil, then cover and simmer for 45 minutes, stirring occasionally, until the rice is tender.

4. Add the butter, mix in, then take of the heat and leave for 2 minutes.

5. Serve with chocolate flakes if desired, or just plain.
