A pasta salad of bacon and avocado with red onion and a vinaigrette.

Ingredients

  • 4 slices Bacon (smoked back)
  • 1 large Avocado
  • 2 portions Penne pasta
  • 1 Red onion
  • 2 teaspoons French mustard
  • 1 tablespoon White wine vinegar
  • 2 tablespoons Olive oil
  • To taste Salt & pepper

Recipe Method

Heat a large pan with well salted water, then put the paste on to boil for around 12 minutes till tender.

Whilst the pasta is cooking, cut up the bacon into small slices, then fry off in a frying pan in some light oil. Slice up the avocado, and red onion and set aside.

Make the dressing by combining the olive oil, mustard and vinegar until well blended. Season with salt and pepper to taste.

When the pasta is cooked, cool in cold water, then drain and dry. Combine all the ingredients with the dressing and serve.


Notes

The easiest way to cut up an avocado is to slice it in half, remove the stone (using a heavy knife), then use a large spoon to remove the skins.
