Healthy Microwave Mug Chocolate Fondant Cake

A quick, healthy but indulgent microwave mug chocolate fondant cake. Perfect for a quick dessert. There's far less sugar in this than most cake recipes, and if you use olive oil spread, it's even healthier. The chocolate is optional.

Ingredients

  • 50g self raising flour
  • 10g cocoa powder
  • One large egg
  • 50g butter/olive oil spread
  • 1-2 pieces (optional) dark chocolate
  • 28g demerara brown sugar

Recipe Method

Whisk the Demerara sugar and butter/olive oil spread together in a large bowl till white and creamy. Add in the egg and whisk until well mixed.

Sieve the flour into the batter, followed by the cocoa powder.

Spatula into a large mug, then add the two chocolate pieces (push into the middle of the mix). Place in the microwave with a plate on top.

Microwave on full power for 55 seconds (900-1000w), or 110s (750w), or until the plate is rising off the mug.

Serve with a dollop of cream or ice cream.

    Great dessert considering it only takes a few minutes to create! Definitely needs the cream of ice cream, but a delicious combination.
