Smoked Cod with Horseradish mash and Poached Egg.
For the potatoes:
Wash and peel the potatoes, then cut into small cubes. Add the potatoes to a pan of salted water, and bring to the boil, then simmer for around 15 minutes until the potatoes are soft. Once soft, drain the potatoes, add the butter, milk (or cream if you want!) pepper and mash till smooth. Add the horseradish sauce to the mash and mix in. Check seasoning and add extra salt/pepper if required.
For the fish:
You can either poach the cod in milk (for around 4-6mins till just flaking), or as I did, pan fry it. Pin bone the fish, if not already done, then add to a hot frying pan, skin side down (if there's skin). Fry for around 3-5 mins depending on the thickness of the fish, then turn down the heat and turn the fish. Cook for around 1-2 mins on the other side till the fish is just translucent and flaking.
For the eggs:
Ensure you use as fresh eggs as possible if poaching. I cheat and silicon poachers ;-) Bring a pan of water to the simmer, add a teaspoon of white vinegar (help to keep the eggs together), then add the eggs, poach until the egg white is just cooked, but yolk still runny - around 4-6 minutes.
