Irish Potato cakes with peas and spring onions.
Add the peas, mashed potatoes, sliced shallots, half the flour, seasoning, egg and (optional) smoked water to a large bowl, then mix with your fingers until well combined. The smoked water is great for adding a lovely light smokey flavour through the cakes.
Once mixed, break the mix into 4 even amounts, then roll into balls, which you then gently flatten to create the patties.
Lightly dust the patties on both sides with the remaining flour.
Fry the cakes in butter in a frying pan on a medium high heat for around 5 minutes each side or until golden brown.
Serve with sauce/dip of your choice (brown or hot BBQ is my favourite !), and side salad, enjoy :-)
