This is my recipe for a brown artisan style loaf (I use a bread maker so slightly cheating).

  • 300g Extra strong white flour (preferably Canadian)
  • 90g Extra strong wholemeal flour
  • 10g Scottish porridge oats
  • 9g Toasted sesame oil
  • 7g Light olive oil
  • 2 teaspoons Demerara or muscovado sugar
  • 1 teaspoon Sea salt
  • 1 tablespoon Sesame seeds
  • 1 tablespoon Poppy seeds
  • 1 tablespoon Sunflower seeds (optional)
  • 300ml Water
  • 1-2 tablespoons to taste Malt extract
  • 3/4 to 1 teaspoon Bakers Yeast

Recipe Method

To be honest I usually use a bread maker for this recipe. Add the ingredients to the maker, then set for a medium size seeded loaf (4 hrs).

Once out of the bread maker, I usually put the bread in a pre heated over @200 centigrade for 8-10 minutes to really build the crust.
