Gnocchi in a Spicy Tomato Sauce

A simple gnocchi dish with a spicy tomato sauce.

  • 500g Gnocchi (fresh shop bought is fine)
  • 400g chopped tomatoes
  • 4-5 cloves garlic
  • Good handful parmesan cheese
  • 2 tblspns extra virgin olive oil
  • 2-3 deseeded (or leave seeds if you like it hot!) chilli
  • To taste salt & pepper

Recipe Method

Chop the garlic and chill into thin slices. Heat a medium sized frying pan till hot, then add the olive oil, garlic and chilli and fry for 2-3 minutes on a low heat. Add the chopped tomatoes, then using a hand blender carefully blend these on a low speed, leaving a few chunks of tomato for texture. Season with salt and a good grind or two of pepper, then simmer for around 15 minutes.

Cook the gnocchi for the recommended time in a pan of simmering salt water. Once cooked, drain thoroughly, then add to the frying pan with sauce and mix well.

Serve with a good drizzle of extra virgin olive oil and enjoy :-)
