Stewed Lambs Kidneys with rice

A simple recipe for kidneys made delicious with the bacon topping

  • 400gms Lambs kidneys
  • 1 rasher Bacon
  • 1 tablespoonful Cooking Oil
  • 1 Onion - finely chopped
  • 1tbsp Plain Flour
  • 1/4 teaspoon Mixed Herbs
  • 1/4 teaspoon Marmite (optional)
  • 3 Medium, chopped Tomatoes
  • For 2 people Rice
  • 3 rashers Bacon - topping
  • For trimming Parsley or watercress

Recipe Method

In a medium pan heat the oil and add the finely chopped bacon. Fry for several minutes then add the chopped onion. While this gently cooks cut bite size pieces off the kidneys and throw away the cores.Rince kidneys in a large sieve with cold water, drain. Add the kidneys to the pan and turn up the heat and fry until well browned. Stir in the flour and mix well and cook for one minute. Add the tomatoes and a little water and bring to the boil stirring. Add the herbs and marmite. Cook, stirring occasionally for about 15 minutes while you cook the rice. Cut the bacon for the topping into small pieces and grill til slightly crisp.
