Spicy Chorizo Stew with Butter and Cannellini Beans

A quick and easy spicy chorizo and bean stew using butter and cannellini beans. Serve with savoury brown rice, or crusty bread :-)

  • 100g chorizo
  • 1 large, half chopped, half sliced red onion
  • 400g tin butter beans
  • 200g tin cannellini beans
  • 400g tin chopped tomatoes
  • 3 cloves garlic
  • 1 tblspn smoked paprika
  • 1 1/2 tblspns sherry vinegar
  • good pinch smoked sea salt
  • several good grinds course ground pepper
  • 1/2 teaspoon dried chilli flakes

Recipe Method

Fry off the chorizo and onions for around 5 minutes on a medium till the chorizo is beginning to brown. Add the garlic and dried chilli, turn down the heat and fry for another 2 minutes.

Add the smoked paprika, tomatoes and both beans. Simmer on a low heat for around 15 minutes. Add the sherry vinegar, season with salt and pepper to taste and simmer for another couple of minutes, then serve and enjoy :-)

    Surprisingly simple and quick to make, healthy yet really delicious. Went well with a glass (or 4) of Rioja.
